It includes 1/6-size pans with covers, and its pan rail uses a “cold wall” heat transfer system instead of air cooling. The unit sits on plastic, non-scratch feet, providing durability and stability. The self-contained capillary tube system uses CFC-free refrigerant, making it environmentally friendly, and it meets NSF Standard 7 for open food storage. This prep unit requires manual defrosting as it has no built-in defrost system and is classified as an “in-service” item, meaning it must be powered off for defrosting.
